Cottage Cheese Berry Cloud Bread

1 cup cottage cheese
3 large eggs
1 teaspoon vanilla extract
1 tablespoon sugar or sweetener of choice
1/2 cup mixed berries (fresh or frozen)
1 teaspoon baking powder

Instructions: [reheat your oven to 350°F (175°C). Line a baking sheet with parchment paper to prevent sticking and make cleanup easy. In a mixing bowl or blender, combine the cottage cheese and eggs. Blend until completely smooth and creamy. This step is important—any lumps in the cottage cheese can affect the final texture. Add the vanilla extract, sweetener, and baking powder to the mixture. Blend or whisk again until everything is fully incorporated. Gently fold the mixed berries into the batter using a spatula. Be careful not to overmix—you want the berries to stay mostly whole for bursts of flavor and color. Using a spoon or scoop, drop portions of the mixture onto the prepared baking sheet. Form them into rounds, leaving space between each one as they puff slightly while baking. Bake for 20–25 minutes, or until the tops are lightly golden and set. The cloud bread should feel soft but not wet when gently touched. Remove from the oven and allow to cool on the baking sheet for a few minutes. The cloud bread will firm up slightly as it cools, making it easier to handle.
